The practical and compact biscuit cutter Formfix 1-2-3 is the ideal tool for small bakeries and pastry chefs and fits into even the smallest bakery.
The Formfix 1-2-3 is very easy to use.
Simply place the prepared dough in the funnel and turn the crank until the first biscuits are formed. Then, by turning the crank further, insert the transfer tray with baking paper and form the biscuits on the transfer tray, aligning them by hand if necessary to ensure even spacing. Now pull the baking paper with the biscuits onto a larger baking tray and bake.
The Formfix 1-2-3 biscuit moulder is a wonderful device for shaping marzipan, fondant / sugar paste and low-fat shortcrust pastry, such as speculoos. It is also possible to shape so-called 1: 1: 2 shortcrust doughs (ratio of 1 part sugar, 1 part fat, 2 parts flour), which are used, among other things, to create crunchy butter biscuits. However, recipes with a higher fat content, such as those used for the preparation of classic croissants or English shortbread, are only partially suitable for moulding with the Formfix 1-2-3, as they tend to stick in the moulding roller due to the high fat content.
After the biscuits have been shaped by the Formfix 1-2-3, they are transferred onto baking trays and then baked. After cooling, they can be consumed immediately or stored in airtight tins. Biscuits can be stored in tins for several days or even weeks (depending on the recipe) and will retain their unique consistency.

More than a hundred years ago, cookie doughs were already being shaped and baked by hand using wooden moulds and later with hand-operated machines from Janssen... and this continues to this day... of course with larger machines and motors.
The Formfix 1-2-3 is the result of the continuous further development of an ancient, proven principle: the dough is drawn in by two rollers, a kneading roller and a moulding roller, and the moulding roller stamps raised moulds into the dough-covered kneading roller, which are separated from the kneading roller by a cutting knife and conveyed to the baking tray as dough pieces.

Plagiarius 2021: Against brazen theft of ideas - for innovation and fair competition
Unfortunately, the Formfix 105 was brazenly stolen by the Turkish manufacturer Handymach in 2020. The design, construction, function, colours, even the gram-perfect recipe and numerous mould roll motifs were adopted. The internationally renowned negative prize 'Plagiarius' was awarded to the supplier 'Handymach' for its counterfeits in 2021.
We decided to discontinue the production of the Formfix 105, which had been successful for decades, to develop a completely new one and to have it patented.
The result is the Formfix 1-2-3 with a significantly wider range of applications and easier operation.
Our well-thought-out concept and user-friendly implementation also convinced the jury of the internationally renowned 'German Design Award'. The jury awarded the Formfix 1-2-3 in the 'Excellent Product Design' category for 2024.
